- 1 kg beef
- 100 ml vegetable oil
- 600 ml coconut cream
- 12 cloves garlic, chopped
- 4 candlenut
- 250 g onions
- 300 g Serrano chili
- 50 g ginger
- 25 g turmeric, ground
- 50 g galangal
- 1 ½ tsp coriander, ground
- a tsp sugar
- a tbsp salt
- 4 green cardamom pods
- 1 ½ tsp cumin seeds
- 10 whole cloves
- 2 turmeric leaves
- 1 piece tamarind
- 3 pieces kaffir lime leaves
- 4 stalks lemongrass
4. Cooking instructions:
- Cut the meat into 4 cm square, set aside.
- Prepare a food processor, blend all ingredients II. Set aside.
- Take the lemon grass, remove its outer sheath and the green part. Bash them to release the flavor.
- Prepare a wok, pour the vegetable oil and heat up. Sauté the paste of ingredients B and stir until you smell the aroma.
- Add turmeric leaves, coconut cream, kaffir lime leaves, tamarind, and lemongrass.
- Put the beef into the work, cook over medium heat. Bring to boil.
- Once it turns to boil, simmer the wok. Check the stew from time to time, add water you see it is about to dry.
- Cook until the beef is tender and it absorbs the spices thoroughly. Be sure the color turns into dark brown. It typically takes about 3 hours.
